A friend of mine brought this salad to a potluck. It was delicious, healthy, and beautiful so of course I have to post it here.
Black Bean Quinoa
dressing
5 T fresh lime juice
1 t salt
1 garlic clove, minced
1/4 c cilantro, finely chopped
1 t ground cumin
1/3 c olive oil
1/2 t black pepper, or to taste
salad
1 1/2 c quinoa (measurement before cooking)
1 can black beans, drained
1 can corn kernels
1 avocado, chopped
1/4 c fresh cilantro, chopped
1/4 c green onions, finely chopped
1 tomato, chopped
In a small bowl, whisk together dressing ingredients.
Rinse quinoa, and cook according to directions on the package.
Add everything into a big bowl and mix it up. Enjoy!
